Unlike most of the Scottish whiskeys, these are usually double-distilled; the majority of the Irish whiskeys are distilled three times.

By law, any Irish whiskey will need to be barrel-aged in wooden casks in Ireland for a minimum of three years.

Most Irish whiskey is actually aged in ex-bourbon American oak barrels. The secondhand barrels lend the whiskey its distinctive hints of caramel, vanilla and toasted wood.
